Cauliflower
From white to purple to green and orange, this sweet, tender cousin of broccoli is known for its versatility. Roast, sauté, puree, or enjoy raw with dip!
What is Cauliflower?
Cauliflower is a much denser cousin of broccoli with fused florets. The majority of cauliflower that we see at grocery stores is white, but it comes in just about any color from deep purples to bright green and orange.
What does Cauliflower taste like?
Cauliflower has a sweet and lightly nutty flavor, with a more mild broccoli flavor. The texture is what makes it unique, lending it well to being used for a wide variety of dishes.
What dishes can be made from Cauliflower?
As one of the most versatile veggies there is, cauliflower can be eaten just about any way and is a vegan / vegetarian’s best friend, lending itself well to being blended into dairy-free creamy sauces and soup bases, or battered and deep fried into vegan cauliflower “buffalo wings.” Steam, roast, or sauté it up with some garlic and enjoy alongside pasta, rice, or just about any dish you can think of. Toss into a salad with nuts and fresh cheeses. Slice up raw and dip into some classic ranch, the options are endless.
How does Cauliflower grow?
Like broccoli, a cauliflower plant takes up a good amount of space in the field or the garden and takes a good long while to finish forming just one head per plant, unlike tomatoes or peppers that produce many fruits of a single plant.
To keep cauliflower a nice white color and prevent it from getting burnt by the sun, many farmers prefer varieties that grow with leaf coverage, or will go through the field and cut leaves off the plant and place them over the top of the head to keep it shaded and protected.
